The Versatile Oatmeal Bake

4 cups old fashioned rolled oats (not quick cook)
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
2 cups smashed banana’s
     OR 1 can of pumpkin (unsweetened)
     OR 2 cups applesauce (you can put thin sliced apples on the bottom of the pan with the apple version)
3 cups milk (dairy or almond or soy)
3-4 eggs
2 teaspoons of vanilla extract
Mix oats, brown sugar, baking powder, cinnamon in a large bowl
In a separate bowl mix mashed banana’s, milk, and eggs.
Pour wet ingredients into dry ingredients and mix well, should be very liquidy.
Put into a well greased (I use coconut oil) 9×13 baking pan
cook at 375 oven for 35-40 minutes.
serve warm
optional you can sprinkle chocolate chips on top before putting in the oven.
you can also serve with whipped cream if you are feeling decadent.

This is an easy way to make Oatmeal delicious and a great dish to take to brunch potlucks. You can halve the recipe and put in a 9x9inch pan if you do not want so much. We will reheat it the next few days as an easy breakfast or snack.
