Apple Cinnamon Breakfast Cookies
4 Tbsps almond butter
2 tsp vanilla
1 and 1/2 cups shredded apple (I used Granny Smith)
pinch of sea salt
1 tsp cinnamon
1/2 tsp ginger powder
2/3 cup flour (the original recipe used Coconut Flour would make it gluten free and Paleo friendly)
1 tsp baking soda
1 to 2 Tbsps of Honey or more if you need them sweeter, you can do it to taste. Or you can leave it out if you do not want any sugar.
Line a baking sheet with parchment paper and set aside.
Preheat oven to 350 degrees.
Grate Apples and mash the bananas.
Mix all the wet ingredients together in a large bow.
Mix the dry ingredients in a separate small bowl.
Then mix all the ingredients together until fully combined.
Drop cookies by spoonful onto the parchment paper.
Bake for 10 to 15 minutes. They are pretty soft at 10 minutes so I crisped them a bit more and cooked for almost 15 minutes, but watch them carefully as they brown pretty quick.
